As we continue with plant-based eating, we are finding and creating more and more great recipes. Last night with just less than an hour on my hands to make dinner, I decided to throw together a vegan chili. I had most of these ingredients in my pantry and refrigerator. and this recipe is full of nice organic veggies with lots of beans for fiber and protein.
This vegan chili recipe can be prepared on the stove or in a crockpot. However, if you make it in a crockpot give yourself some time because it should cook on there for a few hours.
3-Step Directions for Easy Vegan Chili
1. In a large pot take your olive oil and add it with your onion, garlic, carrots, celery and zucchini. Sautee on medium for about 5 minutes.
2. Add the tomato sauce and diced tomatoes.
3. Next, rinse your beans and add them (or add them softened). Then add your corn and spices. Cook on medium-low for an hour.
You can use a crockpot and/or cook this chili on low for several hours if you want to, but it’s ready soon after it’s prepped and hot.
Brown rice goes great with this recipe. I usually cook separately, put some in a bowl and pour a serving of chili over it. Also, check out our recipe for healthy cornbread muffins. They go great with this chili!

1 can tomato paste
1 can tomato sauce
2-3 cups water
1 can or cup black beans
1 can or cup garbanzo beans
1 can or cup pinto beans
1 cup zucchini
1 cup corn
1 cup vegetable of choice
4 teaspoons chili seasoning
1 can or cup diced tomatos (fresh or canned)
